Veal Milanese alla Sinatra - Recipe

His Dad Marty used to make it for young Frank and Sinatra ate Veal Milanese over a thousand times at his most favorite restaurant in the World, PATSY'S of NEW YORK on West 56th Street .. Franks other favorites were; Clams Posillipo, Spaghetti & Meatballs,  SUNDAY SAUCE, and Rigatoni Marinara ...

VEAL MILANES RECIPE alla SINATRA

INGREDIENTS
  • 2 cups Bread Crumbs (Plain)
  • 2 tablespoons freshly grated Parmigiano-Reggiano

  • 1/4 cup minced flat-leaf parsley
  • 1 cup plus 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 4 veal cutlets (about 1 1/4 pounds), pounded thin to slightly less than 1/4 inch
  • Salt and freshly ground black pepper to taste
  • 1 lemon, cut into 8 wedges
DIRECTIONS 
Break or cut the bread into large chunks and place in a food processor. Process until the bread is reduced into fine crumbs. Transfer the crumbs into a large bowl and stir in the cheese, oregano and parsley. Gradually add 3 tablespoons of oil, stirring until thoroughly combined. Season with salt and pepper.
Spread the flour onto a large plate, plate the eggs in a shallow bowl and spread the seasoned bread crumbs on a second large plate. Coat each veal cutlet in the flour, then the beaten eggs and then the bread crumbs, patting with the palm of your hand to ensure adhesion.
Heat 1 cup of the oil in a large nonstick skillet over medium-high flame (to a frying temperature of 350 degrees F.) and sauté the veal for 2 minutes. Turn and sauté for 1 additional minute. Do not crowd the pan. If necessary, fry the cutlets in batches. Remove with a slotted spatula and drain on paper towels. Season to taste with salt and pepper and serve with lemon wedges.

Pavarotti Pasta Recipe

 




LUCIANO Cooks PASTA





"BRAVO LUCIANO" !!!



PAVAROTTI PASTA

Recipe :

1/2 cup extra virgin olive oil
1 medium Onion, peeled and sliced
2 j- 32 oz. jars of Italian Tomato Passata (we like Mutti)
3 cloves Garlic, peeled and chopped
2 tbsp. Tomato Paste
1/4 cup red wine
1/4 cup chopped Italian Parsley
12 fresh Basil Leaves, washed and torn with your hands
1/2 cup grated Parmesan or Romano cheese
1/2 teaspoon Red Pepper Flakes
1 pound of imported Italian Spaghetti (best quality)

In a large skillet, add the Olive Oil and onion. Cook the onion on low heat for 4 minutes. Add the garlic and cook on low heat for 2 minutes.

Add the wine, turn heat to high, and cook for 5 minutes.

Add the Tomatoes, Tomato Paste. Add 1 1/2 teaspoon each of Salt & ground Black Pepper, and half of the Pecorino Cheese.

Bring to the boil. Once the tomatoes start to bubble, low heat to low, and cook on low heat for 20 minutes, being sure to stir with a wooden spoon, scraping the bottom of the pot with the wooden spoon to keep the tomatoes from sticking  or burning.

After 20 minutes, add the Basil & Parsley, and cook 5 minutes more. The Tomato Sauce is done. Turn the heat off and let it rest in the pot.

Fill a large pot, 3/4 full with water. Add 2 tablespoons salt. Bring the water to a rapid boil. Add the Spaghetti.

Cook the spaghetti according to the directions on the package. Two minutes before the the pasta cooking time on package, remove one cup of water from the pot and reserve. When the spaghetti is 1 minute away from the cooking time on package, turn the heat off and drain the pasta in a colander.

Add the Spaghetti back to the pot it cooked in and add half of the cooking water. Add 2 cups of the tomato sauce. to the pot, and turn the heat on to a low flame. Cook for 2 minutes on a low flame. Add more of the pasta cooking water if it gets too dry.

Turn the heat off, and drizzle some olive oil over the spaghetti and mix.

Plate a portion of Spaghetti onto each persons plate. Add about half a cup of Tomato Sauce on top of each portion of Spaghetti, and serve.

Serve with grated Pecorino or Parmigiana Cheese on the side.

How to Make Marinara Sauce - Recipe

 



A POT of MARINARA SAUCE

SPAGHETTI - LASAGNA - MEATBALLS - WHATEVER ?




MARINARA SAUCE


"HOW to MAKE IT" 


RECIPE

INGREDIENTS :

• 1/3 cup Olive Oil⠀⁠
• 2 cups yellow onion, minced⠀⁠
• 4 Tbsp garlic, minced⠀⁠
• 1 cup basil, chiffonaded⠀⁠
• 1/2 cup flat leaf parsley, chopped (optional)⠀⁠
• ¼ tsp pepperoncino⠀⁠
• 4 - 28oz cans high quality tomato puree or whole tomatoes, crushed by hand⠀⁠
• 1/2 can water⠀⁠
• 1 ½ tsp salt (or to taste)⠀⁠
• ½ tsp black pepper⠀⁠
• 1 ½ Tbsp dried oregano ⠀⁠
• big handful fresh basil, whole or torn by hands⠀⁠
⠀⁠
⠀⁠
• In a heavy-bottomed saucepan, heat the olive oil and the onions together on medium-high heat and sauté until the onions are soft and beginning to brown slightly.⠀
• Add the garlic and continue to sauté until the garlic is soft.⠀⁠

• Add the next 3 ingredients and sauté for 2 minutes, to release the flavors of the herbs, while stirring.
⠀⁠
• Add the next 5 ingredients and bring to a light boil, then immediately reduce heat to a low simmer. Simmer for about 45-60 minutes. Adjust seasoning if necessary.⠀⁠

• Remove from heat and stir in the second amount of basil and the marinara is ready to go!
