If you watch the above video of Antonio Sorrentino making his awesome Neapolitan Ragu, you'll see one of the greatest ever. Each cook has their own special recipe. This is Antionio's, and I think it's the best I've ever seen. He uses quite a good variety of meats, including; Pork Spare Ribs, Beef Brisket, Beef Short Ribs, Veal Shoulder, Pig Skin Braciole (Coteca), Pork Neck, and Beef Braciola. It's a great array of meats.

Each family has their own recipe. Italian-Americans are crazy about there Sunday Ragu which some simply call Gravy, while others call it Sunday Sauce as Antonio does. The most popular version of Sunday Sauce Gravy is making it with Sausages, Meatballs, and Braciole, some make it with just Meatballs and Braciola. I like to make mine with; Sausage Meatballs, and Pork Spare Ribs, and some times I mix it up and put in Chicken Thighs as well, which taste really good, and you can take them out, not eat them on Sunday, but save them until Tuesday, to have with a little bit of Maccheroni as well. Monday, you'll make Meatballs Parm Sandwich that you'll make with the Meatballs that you've save just for this very reason, Meatball Parm Mondays. It's a great tradition among Italian American men in the Italian-American Community.
