HISTORY


The origins of Chocolate Eggplant are a matter of some debate. Some say the sisters of the order Agostiniane di Santa Maria della Misericordia invented the dish. These prolific cooks are said to have come up with other famous Campanian desserts, including struffoli and mostaccioli. Others attribute the dish to local Franciscan monks at a monastery in Tramonti, still others maintain that it was brought to Italy by invading Saracens.  The dish gained international celebrity when a visiting nephew of Tsar Nicholas II sampled it at the Grand Hotel Cocumella. It was after that the local bakeries took up the recipe for the general public.

The "Mulignan ca' Ciucculata" was prepared for the first time by a Franciscan friar who used to serve a fried eggplant covered with a sweet and liqueur sauce to his brothers; the addition of chocolate, which occurred at a later time, was a real successful intuition and the recipe passed through the walls of the convent (as it happened for a lot of culinary delights of the Campania region), delighting the palates of the locals too.

In this dessert, layers of fried eggplant are spread with sweetened ricotta and chocolate, which are then refrigerated and served cold.  Chocolate Eggplant is a Neapolitan dessert that is also popular throughout the Amalfi coast.  It is usually served on August 15 to celebrate Italy's national summer holiday, Ferragosto.  Going back centuries, Ferragosto celebrates the end of the harvest season and provides a period of rest.  Nowadays, it is a time when families take a short holiday by heading back to a family home or a beach resort. The date also coincides with the religious feast of the Assumption.  There are many variations of Chocolate Eggplant; many do not include a ricotta filling.  This recipe is very rich and creamy, and certainly unique.





RECIPE - Melanzane al Cioccolato

Ingredients:

1 large eggplant
Flour, for dredging
Olive oil, for frying
3/4 cup sugar
1/2 teaspoon ground cinnamon
Grated zest of 1 lemon

Ricotta Filling:
16 ounces ricotta cheese
1/4 cup sugar
8 amaretti cookies, crushed
1/4 cup sliced almonds
2 tablespoons minced candied orange peel

Chocolate Sauce:
1 cup heavy cream
8 ounces dark chocolate, coarsely chopped
Sweet liqueur, such as Amaretto

Garnish:
Sliced almonds and candied orange peel

Directions:

Peel and slice the eggplant lengthwise into 1/4-inch thick slices.

In a small bowl, combine 3/4 cup of sugar, cinnamon, and lemon zest.
Spread the sugar mixture on a baking sheet and set aside.
Line another baking sheet with paper towels and place near the stove.

Heat 1/4-inch of olive oil in a large skillet over medium-high heat.
Lightly dredge the eggplant slices in flour.  Fry the eggplant in batches until they are lightly golden on both sides.  Transfer the cooked eggplant to the paper-towel lined baking sheet to drain.  While the slices are still warm, transfer them to the baking sheet with the cinnamon-sugar mixture. Press each slice into the sugar mixture to coat both sides. Set aside until you are ready to assemble the dessert.

To make the filling:

Stir all of the filling ingredients together in a bowl; set aside.

To make the chocolate sauce:

Heat the cream in a saucepan until it just begins to come to a simmer.
Remove from the heat and add the chocolate.  Let the mixture sit for 1 minute and then stir it until smooth. Add a splash of liqueur and stir to combine; set aside.

To assemble the dessert:

Arrange 1 layer of the fried eggplant slices in the bottom of a (6 x 10-inch or 8 x 8-inch) baking dish.  Spread half of the ricotta filling evenly over the eggplant. Spread a thin layer of the chocolate sauce on top.  Repeat the layers one more time and finish with a final layer of eggplant.  Pour chocolate sauce over to cover the top.  Sprinkle some sliced almonds and candied orange peel on top as a garnish.  Refrigerate until the ricotta sets and the dessert is cold, about 2 hours. Cut into squares and serve cold.

SEXY FILTHY PASTA
 
by Meghan Markel The Duchess of Sussex
 
 
Ingredients :
 
1 medium Onion, peeled and cut into small dice
5 medium Zucchini, washed and sliced into half-Moon shapes
1/2 cup water
1 Chicken Bouillon Cube (optional)
Juice and zest of 1 Lemon
2 tablespoons Olive Oil
1 cup Parmigiano Reggiano Cheese, grated
Salt & Black Pepper
1/4 teaspoon Red Pepper Flakes (optional)
1 pound imported Italian Spaghetti ( Rigatoni or Pasta of your choice)
 
 
Place olive oil in a large Frying Pan with onions and cook at medium heat for 7 minutes, stirring occasionally.
 
Add Zucchini, Water. and Bouillion. Cook on medium heat for 10 minutes, until the zucchini has soften, but is still slightly firm.
 
Add Salt & Black Pepper to taste (about 1/4 teaspoon each) and stir.
 
Cook pasta according to directions on package.
 
Add some (1/3 cup) of the pasta cooking water to the Zucchini and mix. Add, half the grated Parmigiano to Zucchini and mix.
 
Drain the pasta from the water, reserving some water in case you need it.
 
Add the drained pasta to the zucchini and mix. If too tight, add a little more water and mix.
 
Divide the pasta into 4 equal portions in pasta bowls or plates.
 
Serve guests with the grated cheese on side for everyon to sprinkle over their Sexy Filthy Pasta alla Markel.

Unlike so many other famous recipes, spaghetti alla Nerano has a very precise origin. It was invented by a local restauranteur named Maria Grazia (pictured) and served at her eponymous beachside restaurant, where you can still enjoy her pasta dish today. According to the restaurant’s website, she invented the dish “just for fun” in 1952. Her precise original recipe remains a house secret. Indeed, there is talk about a “secret ingredient” that makes her version unique. But that hasn’t stopped the dish from becoming a favorite of restauranteurs and home cooks alike.

RECIPE
 
SPAGHETTI NERANO
 
Ingredients :
  • (1 lb) spaghetti
  • (1-1/2 lbs) zucchini, sliced into thin rounds
  • (1/2 lb) provolone cheese, grated (see Notes)
  • 2 or 3 garlic cloves
  • A few basil leaves
  • Olive oil
  • Salt and pepper
  •  
 
  1. Fry the zucchini slices in oil (preferably olive oil) until they are lightly browned. Proceed in batches if your skillet isn't large enough to hold all the slices in a single layer. As they are done, lay the fried zucchini slices on paper towels to absorb the excess oil. Sprinkle lightly with salt.
  2. Bring a large pot of water to the boil, salt well, and throw in the spaghetti. Cook until very al dente.
  3. While the spaghetti is cooking, in a large skillet or sauté pan, sauté the garlic lightly in olive oil. Remove the garlic.
  4. When the pasta is done, drain it, but not too well. Add the zucchini rounds and then then pasta to the skillet and a ladleful of pasta water. (If you want, reserve some of the zucchini for garnish.) Mix everything together vigorously for a minute or two. (The zucchini rounds are bound to break up, but that's normal.) Then add the grated cheese and some more basil leaves, and continue mixing until the cheese has completed melted into a creamy sauce, adding more pasta water if need be to keep things flowing smoothly.
  5. Serve your spaghetti right away, topped with the remaining zucchini slices for garnish, along with perhaps a basil leaf or two.

Italian Baked Maccheroni Recipe









BAKED MACCHERONI

INGREDIENTS :

      1 pound Maccheroni (Rigatoni, Ziti, or Cavatapi)



  • 1)    To prepare the Baked Pasta With Eggplants you must first of all prepare a           simple tomato sauce.  In a large saucepan brown the garlic with the olive              oil, add tomato sauce,  salt & cook  slowly over low heat for about 1 hour.               Add the fresh basil.
  • 2)     In the meantime, wash the eggplants, cut them into cubes and fry them in              hot olive oil.
  • 3)     When ready put the fried eggplants on paper towels. Let them cool and                add them to the  tomato sauce.

  • 4)     Cut the Mozzarella into cubes 
  • 5)      Cook the pasta in abundant salted water. Drain the pasta al dente and                    season with the tomato and eggplant sauce. Add the mozzarella and a                      grated Parmigiano Reggian  Cheese and stir over an unlit flame. (or                         Grana  Padano)
  • 6)       Pour the pasta into an oven pan. Sprinkle the surface with a grated                          Parmesan and  bread crumbs.
  • 7)       Bake at 350 F degrees for about 20-30 minutes. The last few minutes use the grill                         function until  the crust has formed on the surface. Enjoy Baked Pasta!
